This is an outdoor oven called a "horno". Today these ovens are still a popular method for baking bread. El Rancho de las Golondrinas is a fully restored historical landmark on the original Camino Real, the well traveled road from Mexico City to Santa Fe, New Mexico during the 1700-1800s.
